S'mores Cupcakes
As I mentioned in my last post, I had to make some cupcakes on Saturday. Well, "had to" is a strong term...I wanted to make some cupcakes for my friend Wendy's birthday. She was advertising it in part as a "cake tasting" party, whatever that means, so guests were encouraged to bring cakes of various kinds. There were red velvet cupcakes topped with tart blackberries, a delicious malt layer cake with whipped-cream frosting, a moist vegan chocolate cake, and mocha-chocolate cupcakes with peanut butter-cream cheese icing. Last but not least were these puppies, my very own S'mores cupcakes! So easy, yet so tasty (and not the slightest bit good for you).
The cupcake part can be any chocolate cake you like (such as Martha's One-Bowl Chocolate Cupcakes, which is pretty much my standby). Edit: Just so you know, I always get far more than 24 cupcakes from this recipe for some reason. (That's good, since the frosting recipe makes a ton.) Here's how to make the frosting:
1/2-3/4 lb. (2 or 3 sticks) butter, room temperature
1 lb. (2 cups) confectioner's sugar
1/2 tsp. vanilla
16 oz. tub of marshmallow cream (I recommend Fluff)
Cream the butter (I love my Kitchenaid!) on high until it's light and fluffy. Add the confectioner's sugar, 1/4 cup at a time, and beat until fluffy each time. Beat in the vanilla until incorporated. Then dump in the Fluff and mix it up 'til it's all creamy. Transfer to pastry bag (if desired) and pipe onto cupcakes! (You can also cut the corner off a Ziploc bag and use that instead.)
The tops are dusted with graham cracker crumbs, and each cupcake is topped with a square of Hershey's chocolate. Yes, there are fancier chocolate bars out there—but for that authentic retro campfire taste, I say you oughta stick with the classic.

I don't eat marshmallow and I am allergic to chocolate, but these look so amazing that I think I would gobble up a whole tray!

Thanks for sharing the actual recipe because that whole pound of butter helped the rational side of my brain kick in and stops the lust. They sure are scrumptious looking, though. You did a beautiful job.

Tried these over the weekend. Skimped on 10 oz of the Marshmallow Cream by accident. Still tasted and performed great - just didn't taste like Marshmallow Cream! LOL. Can't wait to try this again and do it right. Thanks again for sharing.

I totally made these yesterday and they are so fantastic! I brought a couple to my neighbour and they thought I bought them, hahaha! The icing is ridiculous though! I have way more left over than I actually used! I think I'll half the butter next time around.

Your cupcakes look wonderful! I tried to make the marshmallow frosting for some 4th of July cupcakes, but it came out so runny it wouldn't stay on the cupcakes! Do you have any advice for me? I'm not sure what I did wrong. Thank you so much!!! :)

I made these this weekend and they were absolutely delicious! I wish I'd had the graham crumbs to complete the taste, though. And now somehow I feel like my teeth will never quite recover from the sugar...I suppose I'd better just eat another one and forget about it ;)

I am making these right now, and I'm using the chocolate cake recipe you posted. I have a question, is the chocolate cake batter super thin? I'm affraid I messed up, but I double checked the recipe. I feel like I'm filling cupcake liners with thick chocolate milk.
These are gorgeous. And as soon as my kids saw a picture of them, I was forced to make them.

Wow, these are super-sweet. I could barely finish one!
My frosting didn't look quite this nice--not quite as fluffy. I think the butter was too warm when I mixed it up. I found that the frosting went on the cupcakes better after both it and the cupcakes had been refrigerated for 10-15 minutes. Otherwise, the frosting was too soft to keep its shape.
